Chai Protein Pancakes with Homemade Coco Whip




Ingredients for Pancake

  • 2 pasture raised eggs (@vitalfarms organic pasture-raised!)

  • 1.5 cups unsweetened nut milk

  • 1/4 cup coconut oil

  • 2 TSP pure vanilla extract

  • 1/2 cup almond flour

  • 1 cup buckwheat flour

  • 1/2 TSP baking soda

  • 1 TSP baking powder

  • 2 TSP pumpkin pie spice

  • 1/4 TSP cardamon

  • 1 TSP cinnamon

  • Toppings: unsweetened coconut flakes, sprinkle of cinnamon, fresh fruit, & organic maple syrup


Ingredients for Coco Whip

  • 1 can *chilled coconut cream

  • 1/3 cup monk fruit powder

  • 1/4 TSP cinnamon
